It is kind of fascinating, how something that simple can be that good!!
For this healthy meal or snack, bake your own bread first. Once you have the loaf of bread, slice off a piece. Spread some mushroom tapenade as a base. Top it with avocado slices and tomatoes. Sprinkle the veggies with some herbs and little bit salt and pepper. For a crispy touch, put it in the oven for a few minutes. I love my bread warm ;o)
Once the bread is baked, this healthy snack is ready in a few minutes!
Here is what you will need
For the Bread
-) 2 Cups Whole Wheat Flour or Spelt Flour
-) 10g Dry Yeast
-) 2 Cups Warm Water
-) 1 Cup Walnuts
-) 1 1/2 Tbs Salt
-) 2 Tbs Bread Seasoning
Make Your Own Bread Seasoning:
Get the following spices dried, and mix them together.
-) Roasted Malt
For the Topping
-) Avocado – slices
-) Cherry Tomatoes – halves
-) Mushroom Tapenade (Aldi)
-) Salt, Pepper, Herbs
Step No 1 – Prep the Bread
Mix all dry ingredients together, then add warm water and knead to dough with your hand blender.
Step No 2
No need to set it aside and let the dough rest. Simply fill it into a pan which has a coat of oil and flour to avoid stickiness.
Step No 3
Bake it in the oven at 400F/ 200C for about 1 hour. Cut the avocado and tomaotes into slices/ halves while the bread bakes.
Step No 4
Take the loaf out of the pan and bake it for another 5-10 minutes.
Step No 5 – Veggie Layers
Slice off a piece and spread the mushroom tapenade on top of it. Layer with the avocado slices and tomatoe halves. Sprinkle a little bit salt, pepper and herbs on top of it.
Step No 6 – optional
Bake the sandwich in the oven at 350F. It should not take more than 5 minutes to make it warm and crispy.
