Increase your veggie intake by meal prepping a veggie based soup. Add lean protein to your diet with this healthy meal made of curry, cauliflower and mushrooms.
Cauliflower is high in vitamin C, which can boost your immune system. Mushrooms have lots of vitamin B, which helps the body to get energy from food, and helps form red blood cells. Both have some extra protein, which keeps you full and supports your recovery after exercising.
Curry powder is a popular spice mix that has a number of valuable health benefits, including the promotion of a healthy digestion and protection against heart disease.

Adding fiber to your diet can boost your metabolism and makes you less tired. This is especially important during the darker time of the year!
For making it extra creamy, and adding extra protein, you could stir in a tablespoon of (vegan) cream cheese to your hot cup of soup.
Stay warm and healthy with this simple, but very nutritious veggie soup!
