Run Longer On Sweet Potatoes
Sweet potatoes are starchy root veggies full of healthy carbs, fiber, protein and are super high in Vitamin A. Vitamin A may act as an antioxidant, particularly during endurance training. It is believed that Vitamin A could improve performance by decreasing oxidative stress.
This recipe is a great way to ramp up your beta carotene intake, which your body converts into Vitamin A.
3/4 cup Sweet Potato
1/2 Cup Ground Hazelnuts
1/4 cup Apple Sauce unsweetened
1 tsp Vanilla Extract
1/2 cup Flour – I used 1/4 Cup Spelt Flour and 1/4 Cup Quinoa Flour
1/2 cup dark Chocolate Chips
2/3 cup Brown Sugar
1/4 cup Cocoa Powder
2 tsp Baking Soda
Boil a large sweet potato, which is equal to 3/4 cup.
Peel the potato and mash it in a large bowl.
Add the remaining ingredients and blend into a smooth mix.
Fill into a silikone form or one lined with parchment paper. Bake in oven for 20 minutes at 325F (160C).
Let cool off and enjoy it either as a healthy dessert or a snack with a cup of coffee!
