Spelt Apple Cinnamon Bread

Lots of flakes and oat-style ingredients

We found delicious apples today, and I got inspired to try a little twist of a recipe. Lots of healthy carbohydrates and some lean protein. Spelt is rich in fiber, iron and manganese, and has a sweet, nutty flavor.

The beauty of traveling abroad is the opportunity to use other people’s kitchens (plus utensils) and getting the chance to explore different ingredients.

Austrian apples, flakes and local honey – lovely

Again a very simple recipe which asks for several good quality ingredients. Once you get them all, you pretty much just mix them together.

Ingredients

Many items, but simple prep

1 Large Apple, grated
3/4 Cup Rolled Spelt Flakes (or Old-fashioned Oats)
3/4 Cup Unsweetened Soy Milk
1/3 Cup Quick Oats
1 Cup Spelt Flour
1/3 Cup Brown Sugar
3 Tbs Honey
1/3 Cup Unsweetened Apple Sauce
1/3 Cup Vanilla Yogurt
1/2 Cup Chopped Walnuts
3 Tbs Canola Oil
1 Egg
1.5 Tbs Baking Powder
2 Tbs Ground Cinnamon
Pinch of Salt

Step #1
Soak the rolled spelt flakes in the soymilk and set aside for 10 min. Grate the apple and put it in a large bowl.

One large apple, or 2 small ones

Preheat the oven to 300 F/ 150 C. Mix all the remaining ingredients into the large bowl.

Fill smooth batter into a small pan. I got to use springform pan, which came in very handy. You can detach the rim by releasing the clamp, which helped me to free the bread without tearing off anything. Genius!

Bake in oven at 300 F/ 150 C for 40 min.

40 min should be plenty

Tastes delicious with some applesauce or yogurt! I love it for breakfast with lots of fruits and coffee ;o)
