Simple Summer Salads

Plan ahead – if you know you are going to have a very busy week, pick up pre-cut bags of salad greens and add baby carrots or cherry tomatoes for a salad in minutes.

Surely we prefer to eat our veggies freshly prepared, but sometimes we need a simple alternative. Keeping it simple but healthy will make you feel better. No guilt if you do not have time to cook a time-consuming dish. We are all busy – buy vegetables that are easy to prepare.

On those days when you have a little extra time in the evening, prepare a simple salad for the next day.

Here are 2 simple ways to increase your veggie intake:

1) Cucumber Raddish Tsatsiki

Cut cucumber and red raddish into slices, place on plate and top with Tsatsiki.

2) Simple Tomato-Olive Salad

This salad is tossed together in a few minutes. You can even prepare it for the next day. Add some extra protein by sprinkling Hemp Seeds on top of it.

Ingredients
Salad Items
-) Cherry Tomato Halves
-) Lettuce, cut
-) Egg white, boiled
-) Olives
-) Hemp Seeds

Dressing
-) Olive Oil
-) Vinegar
-) Salt, Pepper, Ground Garlic
-) Lemon Juice

Directions
Step No 1
In a medium sized bowl, toss together salad items.

Step No 2
In a small bowl, make your own dressing by mixing of olive oil, vinegar, salt, pepper, garlic and lemon juice together.

Step No 3
In a small bowl, mix together the amount of salad and dressing you are going to eat right away.

Save some of the left-overs in the fridge. Keep the salad and the dressing separate to maintain the crispness of the veggies.

Having an already prepared bowl of salad readily available increases your chance of eating something healthy! Reduce poor nutritional choices by planning ahead.
