Red Beet – Leek – Salad

This is a healthy dish I like to bring for pot lucks. It can be prepared in advance, kept in the fridge and is easy to transport in a sealed container.

The prep time is pretty short and it only include simple steps. Most of the time is spent cutting the veggies.

Then you finish tossing it all together.


4 Medium Sized Beets, cooked, chopped
2 Medium Sized Leek Rolls, chopped
1 Cup Mozzarella, chopped
2 Tbsp Canola Oil
Salt, Pepper, Mustard, Lemon Juice
2 Tbsp Horseradish
2 Tbsp Fat-Free Greek Yogurt
2 Tbsp Low-Fat Sour Cream

Step No 1

Heat canola oil in small pan, saute chopped leek for a few minutes.

Step No 2
Fill chopped mozzarella, beets and leek into medium sized bowl.

Step No 3
Season with horseradish, lemon juice, mustard, salt and pepper.

Step No 4
Add Greek yogurt and sour cream. Mix until well blended.

Step No 5 – optional
Ideally let it rest for 1-2 hrs until served with whole grain bread, potatoes or brown rice.

Enjoy this root vegetable dish which is filled with healthy fiber, Vitamin C and potassium. Beets might even boost endurance performance!

Better go and get some beets next time you go to the store ;o)
