Here is a base version of a recipe I like to use in different variations. It is gluten- and diary free, and can easily turned into vegan as well. Simply replace the egg with 2 Tbsp Chia Seeds soaked in water for 10 min.
You can add nuts, dates, coconuts or other dried fruits to mix it up. Even chocolate chips would be possible ;o)
When I use more dry ingredients in my mix (eg. when I add cocoa powder), I replace the 1/4 cup of brown sugar with honey, maple syrup or apple sauce. This makes the dough a little bit more moist and the baked cookies a more chewy. They do not tend to dry out as quickly.
What You Need
1.5 Cups Quick-cooking Oats
1/4 Cup Brown Sugar
1.5 Tsp Baking Powder
1/2 Tsp Salt
2 Tsp Cinnamon
1 Tsp Vanilla extract
1/2 Cup Almond Milk
1/4 Cup Peanut Butter 1/2 Cup Walnuts
1/2 Cup Ground Almonds 1/4 Cup Chocolate Chips
Just mix the ingredients together. Spread out on flat pan lined with baking parchment.
Bake @ 350F for 15-20 min (depends on thickness of dish).
