Honey Ginger Squash Soup

Ingredients

Simply Use A Can If You Can’t Get A Fresh Version

2 Tbsp Olive or Canola Oil
1 small piece of Fresh Ginger, chopped
1 large Onion, chopped
1 Yellow Summer Squash, chopped
1 Can Pumpkin Puree or 1 Cup of Chopped Pumpkin
1 Cup Water
1 Veggie Stock Cube
Salt, Pepper
3 Tbsp Honey

Instructions

Step #1

In a medium size pot, saute the chopped onions and the ginger in the canola oil.

Step #2

Add the rest of the ingredients, bring to a boil. Boil for 5-10 minutes until the squash is soft.

Step #3

Take the pot off the stove. Stir in the honey, let it sit for 5 min before serving.

Honey Levels the Otherwise Bitter Taste

It will keep in the fridge for a few days. Freeze left-overs and benefit from its healthy nutrients later.
