
How delightful to convert my Austrian Grandma’s traditional X-mas cookie recipe of so called ‘Nusstaler’ into a healthier version made with spelt flour.

And made a second version with poppy seeds – freshly delivered from Austria – delicious!

Ingredients

1 1/2 Cup of Spelt Flour
1/2 Cup Brown Sugar
1/2 Cup finely chopped Walnuts
1 Egg
1/2 Cup Canola Oil
1 Tsp Baking Soda

INSTRUCTIONS
Step 1
Blend all ingredients until a firm, non-sticky dough forms.
Step 2
Roll dough on a flat surface until 1/4 inch thick (1/2 cm). Use cookie clutters to cut out forms.

Step 3
Place cookies on a cookie pan covered with a sheet of baking parchment.

Bake in oven for 15 minutes @ 350 F (180 C).

Step 4 – Extra Nutty Topping
Take another egg and extract egg yolk. Fluff it up with fork. Use a kitchen brush to put a thin layer of egg yolk on each cookie surface. Top it with a chopped walnut.

They are most Austrian sweets, they are way less sweet compared to American deserts. Perfect with a cup of ☕!
