Breakfast Cookies

Vegan & Meal Prep

If you like healthy but simple breakfast options, you will be a big fan of this recipe. It is easy to put together, and you can prepare it in advance.

All ingredients are vegan and do not require a lot of prep work.

I found it in an Austrian recipe book, and tried a variation of the original version.

Here is what you will need


-) 1 Apple

-) 1 Cup of unsweetened Apple Sauce

-) 1/4 Cup Coconut Oil

-) 1/4 Cup Maple Syrup

-) 1 Cup Quick Oats

-) 1/2 Cup Whole Wheat Flour

-) 1/2 Tsp Baking Powder

-) 2 Tsp Cinnamon

-) 1/2 Cup Chopped Walnuts


  1. Pre-heat the oven to 350 F (180 C). Grate the apple.

2. Pour all ingredients into a large bowl and blend them until smooth.

3. Form small cookies, I used 2 teaspoons, and put them on a pan lined with non-stick parchment paper.

4. Bake in oven for 10-15 minutes.

I like mine with a cup of coffee and some fruits!
