Black Bean Garlic Soup

Last week I got to eat at Ikea, a Swedish furniture store in Atlanta. They had a delicious black soup, and I got hooked on the savory taste.

It inspired me to try my own version. You will only need a few ingredients, and it does not take more than a few minutes to throw it together.
I bought a new garlic press at Ikea, which made the freshly minced garlic even better.

5-6 Garlic cloves, minced
2 cans of Beans, black or red kidney
1 medium Carrot, chopped
3 tbsp Tomato sauce
1 Veggie broth cube


Step 1
In medium pot, saute lots of freshly minced garlic until lightly brown.

Step 2
Add 2 cans of beans, 1 chopped carrot, 3 tbsp tomato sauce, 1 veggie broth cube, oregano, salt and let it simmer with a closed lid for 10 min.

I used 1 can of black beans and 1 can of red kidney beans to simply mix up the flavour.

Like most soups, this version tastes best if you let it sit for a few hours, ideally over night. Ingredients without a strong taste, such as beans and carrots, get a chance to absorb the flavour of tasty herbs and spices.

This recipe is very simple but healthy and pretty tasty! Its flavor matures if you let it sit overnight. The extra load of plant-based protein makes it a great recovery food!
